Recipe: No-Bake Oat and Seed Energy Bites

Delightfully easy and delicious snacks packed with nutrition.



INGREDIENTS:

 

  • 1 cup rolled oats

  • 1/2 cup sunflower seed butter (or almond butter if your school allows almonds)

  • 1/3 cup honey or pure maple syrup

  • 1/2 cup chopped dried fruits (apricots, raisins, cranberries)

  • 1/4 cup sunflower seeds

  • 1/4 cup cacao nibs (optional)

  • 1 teaspoon vanilla extract

  • Pinch of salt


METHOD:

 

  • In a large bowl, combine oats, sunflower seed butter, honey (or maple syrup), dried fruits, sunflower seeds, cacao nibs (if using), vanilla extract, and a pinch of salt.

  • Stir until well combined. Adjust the consistency with a bit more honey or seed butter if needed.

  • Shape the mixture into small bite-sized balls and place them on a parchment-lined tray.

  • Refrigerate for at least 30 minutes to firm up before packing into the lunchbox.

 

*Hot Tip: double or quadruple the recipe & store in the freezer and just take what you need out each morning for your child’s lunchbox, that way you have weeks or even months’ worth of yummy & healthy muesli-bar replacements for your child’s lunchbox that you can quickly go-to.
