Delightfully easy and delicious snacks packed with nutrition.
INGREDIENTS:
1 cup rolled oats
1/2 cup sunflower seed butter (or almond butter if your school allows almonds)
1/3 cup honey or pure maple syrup
1/2 cup chopped dried fruits (apricots, raisins, cranberries)
1/4 cup sunflower seeds
1/4 cup cacao nibs (optional)
1 teaspoon vanilla extract
Pinch of salt
METHOD:
In a large bowl, combine oats, sunflower seed butter, honey (or maple syrup), dried fruits, sunflower seeds, cacao nibs (if using), vanilla extract, and a pinch of salt.
Stir until well combined. Adjust the consistency with a bit more honey or seed butter if needed.
Shape the mixture into small bite-sized balls and place them on a parchment-lined tray.
Refrigerate for at least 30 minutes to firm up before packing into the lunchbox.
