Ingredients

Base:
1 cup cooked quinoa (rich in folate and plant protein)
1 cup baby spinach (high in iron and folate)
1/2 avocado (vitamin E and healthy fats)
1/2 cup roasted sweet potato cubes (beta-carotene for hormone balance)
Protein
1/2 cup cooked chickpeas (zinc and fibre)
2 soft-boiled eggs or tofu slices (optional based on preference)
Toppings
1 tbsp ground flaxseeds (supports hormone detox and provides phytoestrogens)
1 tbsp pumpkin seeds (zinc-rich for egg and sperm health)
1 tbsp hemp seeds or sunflower seeds (omega-3 and magnesium)
Handful of blueberries or pomegranate arils (antioxidant-rich)
Dressing
1 tbsp tahini
Juice of 1/2 lemon
1 tsp maple syrup or honey
1 tbsp olive oil
Pinch of sea salt and cracked pepper
Water to thin, if needed
Instructions
Whisk together dressing ingredients until smooth.
Arrange quinoa, spinach, sweet potato, and chickpeas in a bowl.
Add eggs or tofu, avocado slices, and sprinkle with seeds and berries.
Drizzle with tahini dressing.
Serve fresh, or store in a sealed container for 1 day in the fridge.
