Ingredients

Sweet potato is great carbohydrate addition to your meals.

Base:

  • 1 cup cooked quinoa (rich in folate and plant protein)

  • 1 cup baby spinach (high in iron and folate)

  • 1/2 avocado (vitamin E and healthy fats)

  • 1/2 cup roasted sweet potato cubes (beta-carotene for hormone balance)

Protein

  • 1/2 cup cooked chickpeas (zinc and fibre)

  • 2 soft-boiled eggs or tofu slices (optional based on preference)

Toppings

  • 1 tbsp ground flaxseeds (supports hormone detox and provides phytoestrogens)

  • 1 tbsp pumpkin seeds (zinc-rich for egg and sperm health)

  • 1 tbsp hemp seeds or sunflower seeds (omega-3 and magnesium)

  • Handful of blueberries or pomegranate arils (antioxidant-rich)

Dressing

  • 1 tbsp tahini

  • Juice of 1/2 lemon

  • 1 tsp maple syrup or honey

  • 1 tbsp olive oil

  • Pinch of sea salt and cracked pepper

  • Water to thin, if needed

Instructions

  1. Whisk together dressing ingredients until smooth.

  2. Arrange quinoa, spinach, sweet potato, and chickpeas in a bowl.

  3. Add eggs or tofu, avocado slices, and sprinkle with seeds and berries.

  4. Drizzle with tahini dressing.

  5. Serve fresh, or store in a sealed container for 1 day in the fridge.
