Recipe: Veggie Hummus Roll-Ups

These colourful veggie-packed pinwheels make for a delicious and visually appealing lunchbox snack.



INGREDIENTS:


  • Whole grain or spinach tortillas

  • Hummus (a clean brand)

  • Thinly sliced cucumber

  • Shredded carrots

  • Capsicum strips (red, yellow or orange)

  • Baby spinach leaves


METHOD: 

  • Spread a layer of hummus evenly over the tortilla.

  • Layer thinly sliced cucumber, shredded carrots, capsicum strips, and baby spinach leaves on top of the hummus.

  • Roll up the tortilla tightly and slice it into bite-sized pinwheels.

  • Secure each pinwheel with a toothpick or wrap them individually in baking paper.


*Hot Tip: use your pre-cut veggies for the week to save time & make this a quick & easy to make sandwich alternative.
