These colourful veggie-packed pinwheels make for a delicious and visually appealing lunchbox snack.
INGREDIENTS:
Whole grain or spinach tortillas
Hummus (a clean brand)
Thinly sliced cucumber
Shredded carrots
Capsicum strips (red, yellow or orange)
Baby spinach leaves
METHOD:
Spread a layer of hummus evenly over the tortilla.
Layer thinly sliced cucumber, shredded carrots, capsicum strips, and baby spinach leaves on top of the hummus.
Roll up the tortilla tightly and slice it into bite-sized pinwheels.
Secure each pinwheel with a toothpick or wrap them individually in baking paper.
