INGREDIENTS:
2 ripe avocados
¼ cup unsweetened cacao powder
¼ cup unsweetened coconut or almond milk (or any milk of your choice)
2 tablespoons coconut oil (melted)
1 teaspoon vanilla extract
1-2 tablespoons powdered stevia, monk fruit, or pure maple syrup (optional, to taste)
Pinch of Celtic or Himalayan Sea salt
Fresh berries, pomegranate seeds or nuts for topping (optional)
INSTRUCTIONS:
1. Scoop out the avocado flesh and place it in a blender or food processor.
2. Add the unsweetened cacao powder, milk, melted coconut oil, vanilla extract,
and sea salt.
3. Blend until smooth and creamy, scraping down the sides as needed. Taste
and add powdered stevia, monk fruit or pure maple syrup for extra sweetness
if desired.
4. Spoon the mousse into small bowls or glasses and refrigerate for at least 30
minutes to chill and set.
5. Serve chilled with your choice of topping and a sprinkle of cocoa powder.
