These baked apples are filled with warm spices and a crunchy nut topping, bringing a comforting and satisfying holiday flavour without excessive sugar.
Ingredients:
4 large apples (Granny Smith work well)
¼ cup oats
¼ cup chopped walnuts or almonds
1 tbsp coconut oil, melted
1 tbsp maple syrup or honey
½ tsp cinnamon
¼ tsp nutmeg
¼ tsp ginger
Greek yoghurt or coconut yoghurt for serving (optional)
Instructions:
Preheat oven to 180°C.
Core the apples, leaving the bottom intact to hold the filling.
In a bowl, mix oats, nuts, melted coconut oil, maple syrup, cinnamon, nutmeg, and ginger.
Spoon the mixture into the cored apples, pressing gently.
Place the apples in a baking dish and add a few tablespoons of water to the bottom of the dish.
Cover with foil and bake for 25–30 minutes, or until apples are tender.
Serve warm with a dollop of Greek or coconut yoghurt.
