Christmas Spiced Apples


These baked apples are filled with warm spices and a crunchy nut topping, bringing a comforting and satisfying holiday flavour without excessive sugar.


Ingredients:

  • 4 large apples (Granny Smith work well)

  • ¼ cup oats

  • ¼ cup chopped walnuts or almonds

  • 1 tbsp coconut oil, melted

  • 1 tbsp maple syrup or honey

  • ½ tsp cinnamon

  • ¼ tsp nutmeg

  • ¼ tsp ginger

  • Greek yoghurt or coconut yoghurt for serving (optional)


Instructions:

  • Preheat oven to 180°C.

  • Core the apples, leaving the bottom intact to hold the filling.

  • In a bowl, mix oats, nuts, melted coconut oil, maple syrup, cinnamon, nutmeg, and ginger.

  • Spoon the mixture into the cored apples, pressing gently.

  • Place the apples in a baking dish and add a few tablespoons of water to the bottom of the dish.

  • Cover with foil and bake for 25–30 minutes, or until apples are tender.

  • Serve warm with a dollop of Greek or coconut yoghurt.
