Mango "Nice Cream"

Ingredients:

  • 2 cups frozen mango chunks (pre-freeze your excess mangos)

  • 1/4 cup milk of your choice (e.g., almond, coconut, or regular milk)

  • Zest and juice of 1 lime

  • A pinch of salt

Instructions:

  1. Place the frozen mango chunks, milk, lime zest and juice in a high-powered blender or food processor.

  2. Blend until smooth and creamy, scraping down the sides as needed. Add a splash more milk if the mixture is too thick to blend.

  3. Serve immediately for a soft-serve texture or transfer to a container and freeze for 1-2 hours for a firmer consistency.
