Postpartum Nourishing Chicken & Vegetable Soup

This simple soup is warming, easy to digest and rich in protein and minerals to support recovery.



Ingredients

  • 1 tbsp olive oil

  • 1 brown onion, diced

  • 2 cloves garlic, minced

  • 2 carrots, chopped

  • 2 celery sticks, chopped

  • 1 zucchini, chopped

  • 1 cup shredded cooked chicken (or leftover roast chicken)

  • 4 cups good-quality chicken bone broth

  • 1 tsp grated fresh ginger

  • ½ tsp turmeric

  • Salt and pepper to taste

  • Handful of fresh parsley



Instructions


  1. Heat olive oil in a large pot over medium heat.

  2. Add onion and garlic and sauté for 3–4 minutes until softened.

  3. Add carrot, celery and zucchini and cook for another 3–4 minutes.

  4. Pour in the bone broth and add ginger and turmeric.

  5. Bring to a gentle simmer for 15 minutes.

  6. Stir through the shredded chicken and heat for a further 5 minutes.

  7. Season with salt and pepper and top with fresh parsley before serving.


This soup can be made in batches and frozen, making it a great option for busy postpartum days when simple, nourishing meals are needed.
