Ingredients
1/4 cup fresh grated ginger
1/2 onion chopped finely
5 cloves of garlic, crushed or chopped finely
1 fresh chilli, chopped (or 1 tsp cayenne powder)
Zest and juice of 1 lemon
1tsp rosemary
1tsp thyme
Raw apple cider vinegar (enough to cover, approx. 2 cups)
Raw Manuka honey, to taste (added after infusion)

Instructions
Place all the prepared ingredients except honey into a stainless-steel
saucepan. Ensure saucepan is not aluminium (as vinegar reacts with metal. To
check if stainless steel, magnet will stick to bottom).
Gently warm ingredients on low heat for about 15 minutes (do not boil).
Strain ingredients through sieve and discard. Place liquid into a glass jar and
once warm (not boiling) stir in 1 tbsp of Manuka honey. Once it is room
temperature, pop lid on and place in fridge for up to six months.
How to Use
Take 1 tablespoon daily as a preventive tonic.
At the first sign of cold or flu, take 1 tablespoon every 3–4 hours.
